Baked Bosc Pears with Lemon and Cinnamon

These delicious baked pears make a wonderful dessert or enjoy them with your morning oats or chia seed pudding.

INGREDIENTS - serves 2
2 x pears (we love using Bosc pears for this recipe), washed and sliced - leave the skins on
Juice of half a lemon
1 tablespoon maple syrup
2 teaspoons of coconut oil, melted
1 tablespoon of coconut sugar
1/2 teaspoon allspice
Lemon slices
2-3 cinnamon sticks

TO SERVE
Ground vanilla (our favourite is from Natural Vanilla Store)
Your favourite CoCoMe coconut yoghurt or custard - try our Vanilla Coconut Custard, Natural Coconut Yoghurt, Vanilla Coconut Yoghurt or Salted Caramel Coconut Yoghurt.

METHOD
1. Pre-heat oven to 180C and line a baking dish with baking paper.
2. Place the pear slices out evenly over the baking dish. Add the lemon juice and drizzle over the maple syrup and then the coconut oil. Sprinkle over the coconut sugar and the allspice.
3. Add the lemon slices and cinnamon sticks to the baking dish and place in the oven for 15 - 20 minutes or until the pears are just soft and golden.
4. To serve - remove the cinnamon sticks and lemon slices, place the pear slices into a serving dish and sprinkle over some ground vanilla and add a good dollop of your favourite CoCoMe coconut yoghurt or custard. Enjoy!
