Roasted Plums - An Autumn Dessert
During Autumn, we like to create and devour nourishing, warm meals (including desserts) that’s not only satisfying for our taste buds, but gives us comfort too. Just like these roasted plums with star anise, cinnamon and vanilla - paired perfectly with our coconut yoghurts and custards.
INGREDIENTS - serves 4
8 - 10 plums halved and stones removed
Juice of one lemon
3 tablespoons water
Maple syrup to taste
2 - 3 star anise
Sprinkle of cinnamon
Sprinkle of ground vanilla (our favourite is from Natural Vanilla Store)
TO SERVE
Your favourite CoCoMe coconut yoghurt or custard - try our Vanilla Coconut Custard, Natural Coconut Yoghurt or Vanilla Coconut Yoghurt
METHOD
1. Pre-heat oven to 180C and line a baking dish with baking paper.
2. Place the plums cut side facing up in the baking dish and add the lemon juice and water. Drizzle over the maple syrup (we used about 1/2 tablespoon to bring out the natural flavour of the plums, so they aren’t too sweet).
3. Add the star anise to the baking dish, sprinkle cinnamon and ground vanilla over the plums and place in the oven for 15 to 20 minutes or until the plums are just soft.
4. To serve - remove the star anise, place the plums into a serving dish and add a good dollop of your favourite CoCoMe coconut yoghurt or custard. We also love to add a generous helping of our favourite granola from Red Lime Jones for some added crunch. Enjoy!
